Fish Sticks Recipe and Low Fat Donuts

I love spring but am getting a little tired of the outdoor thermostat going hot-cold-hot-cold-hot. Right now it's set on arctic. No wonder everyone is sneezing and coughing. At least it's not raining outside. :)


Breakfast: oatmeal, WW strawberry yogurt and strawberries (4 pts) Very filling and tasty.

Time to take the kids to the "Y" for PE. Only Rachel got to participate. I'm worried that Charlie will hit his head and split it back open. Those staples are still in there.

I didn't take a picture of lunch because it was just too boring.
Lunch: turkey sandwich and watermelon (4 pts)
Got some goodies for the turtle. She's pretty cute and loves strawberries. It seems that these guys are omnivores so I need to get some crickets or mealworms or something. Bizarre Foods with Myrtle Turtle.
Did the Biggest Loser Cardio workout today. Meh. It's ok. Bob is just too nice. I need Jillian to scare me to push myself. Bob is all like "it's ok if you need to modify this. Don't worry. You'll get it. Take a break if you need to but just keep moving. Ok, sweety?" And Jillian is all like "I will rip out your throat if you quit right now. I'll make you use your own severed legs as weights if you even think about stopping. Don't believe me? Try me!" I need Jillian. Fear can be a good motivator.

I also did some Outdoor Fitness. Fun activity points. :)

I have been craving fish sticks (and not those formed chipped pieces of fish but real fish sticks). Kroger had a sale on some cod so this was the perfect opportunity to try a new recipe. The fish sticks in the market just have way too many calories.

Dinner: fish sticks, mac and cheese and salad (8 pts) Everyone said it was much better than the Gordon's fish fillets that we used to have. Even my fish-hating son ate all of his! For the mac and cheese I just boiled 2 oz of Ronzoni noodles per person (3 pts) and used 1 oz of reduced fat Velveeta per person (1 pt) to get a 4 point mac and cheese. Add salt and a tiny, tiny bit of onion powder. If too thick, add a little water instead of milk to save points.

Crispy Fish Sticks (4 pts per serving)
From Discovery Health website; Devin Alexander Recipe

Makes 1 serving

4-ounce cod or snapper filet (skin & bones removed)
2 teaspoons flour
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon paprika
2 pinches black pepper
Pinch onion powder
1 egg white
1 teaspoon fat free milk
1/2 cup whole wheat Panko (Japanese breadcrumbs) (I had to use regular, no wheat)

Preheat the oven to 450 degrees. Spray a small, non-stick baking sheet with olive oil spray.
Place the fish on a cutting board. Run your fingers over the filet to double check that all bones are removed. Then lay a sheet of waxed paper over the filet. If it is thicker than ¼-inch, place it between two sheets of waxed paper. Using the flat side of a meat mallet, pound the filet so that it is about 1/4-inch thick. Then cutting across the filet or on a diagonal (depending the shape of the fish), cut it into 5 even strips.

In a small zipper top plastic bag, combine the flour, salt, garlic powder, paprika and onion powder. Add the fish to the bag and shake the bag to coat the fish. The fish should be completely coated on all sides and there should be little excess seasoning in the bag.
Combine the egg and milk in a small, shallow bowl and beat it lightly with a fork until it starts to bubble lightly.

Spoon the panko into a second small, shallow bowl and place it beside the first.
Take one piece from the bag and dip it into the egg being sure to cover it completely. Then let any excess egg drip off the fish and coat it with the breadcrumbs. Place it on a plate and repeat the procedure with the remaining strips. Spray the pieces lightly with olive oil spray. Then flip them and spray the other side. Transfer the pieces to the prepared baking sheet in a single layer so they do not touch. Place the sheet in the oven and bake the sticks for about 5 minutes per side or until the breading is slightly crisp and the fish flakes. Lightly mist the sticks again with olive oil spray*, if desired.

Makes 5 fish sticks: 215 calories, 25 g protein, 22 g carbohydrates, 2 g fat, trace saturated fat, 49 mg cholesterol, trace fiber, 467 mg sodium

This is 1 serving so adjust recipe to how many people you need to feed.

Dessert: slice of turtle pie (4 pts) So worth it.

That being said, I can't wait to get my donuts in the mail!!!

  2. Hey I have mac & cheese and fish on our menu for Friday. The boys are getting fish sticks but I'll be having a piece of grilled fish. I'm going with the 2% velvetta shells and cheese, i think it's 3 points for 1/2 cup. I might get a little more since my fish is only 2 points. Those doughnuts look yummy, I might have to try them.   3. I just got a new box of whole wheat panko crumbs, I'll have to try this out on my fish tonight (I took Cod out for dinner!!)

    The Ronzoni pasta is my favorite to date. I've really enjoyed the Barilla Pasta Plus, but BF wasnt a huge fan. Once we found the Ronzoni, we are completely hooked! That Mac & Cheese looks delicious.

    My trip to Paradise=Turks & Caicos Islands, we are heading to Middle Caicos for my Uncles wedding. Seriously, I'm flippng excited, but ugh lots of swim suit time
