Not Eating Enough?

Believe it or not, weight can stall if you're not eating enough. And I don't think I have been.  I know weight loss is going to be slow for me but as long as the scale is showing some sort of movement in the right direction I'm happy. For now. ;-)

I'm looking at my food journal and the pictures and realizing that I'm not eating all of the recommended veggies and protein.  That is one good thing about taking pictures and writing it all down: you get a bird's eye view of your eating habits and can make corrections as necessary.  I just haven't been hungry eating this way. 

I mentioned that Rachel (my 15 year old daughter) has lost some weight and a lot of inches just by eating what I cook.  Here's the picture to prove it:
Even the belt that she is using to hold up her pants is too big!  We went to the Goodwill store yesterday to try to find some new bottoms but didn't find anything so we'll go out looking this weekend.  She has the "problem" of being pretty tall (at least 5'8" and growing) which can make finding pants that are long enough a problem.  Fortunately we are reaching shorts season!

She went into the dressing room to try on some jeans and came out saying, "I need hand gel now! I think I just stepped in a puddle of pee in the dressing room.  I want to go home." 

We probably won't be going back. Ewwwwwww!

Started out the day on the run.  Went to the chiropractor and my back and hips are one big ball of knots.  She said they are seized up in a cramp and can I ever feel it!  She got no movement out of my back, just a little out of my neck and hips.  I go back tomorrow so she can work on it again.  In the meantime, my back  hurts like a muthah.  Right between the shoulder blades.

Got to visit the farmer's market.
You have to cross train tracks to get there.
They grow a lot of their produce and have a strawberry picking field where you can pick your own. We did that last year and it was a lot of fun.

The strawberries look so tasty.  Can't wait to add them back into the menu.  Won't be long now.  Just a few more days.
It's an open air type market.  You can get nuts, plants, fruits, veggies, jams (Mayhaw jelly!!!), the best watermelons, homemade beef jerky and sausages, fried pies, and eggs here.  The kids were almost in begging mode for those fried pies.  They are homemade and good with flavors like coconut, chocolate pecan and peach.
The kids: "Stop taking pictures of everything. It's just weird." LOL
Lots of carb friendly veggies for cheap.

New way to cook bacon courtesy of Alton Brown.  He is the MacGyver of cooking!

Slice the bacon in half and place on heated waffle iron.

Close the iron and let it cook for a couple of minutes and check on it.  As soon as it is cooked, remove to paper towels.  Drain off grease and repeat.

I cleaned my waffle iron with hot water.  I'll let you know if it still functions.  This is great for cooking bacon but I'm not so sure how the waffle iron feels about it. May have bacon flavored waffles in the future.  Is that a bad thing?

Weight: 177.9  Not eating enough protein & veggies. Not drinking enough water.  Will be remedied.

Eats:
Breakfast: protein bar on the run

Lunch: bacon cheddar omelet with salsa. I blend my salsa until smooth because I can't stand tomato or onion chunks.
The kids loved these!  We were all quite full afterwards and remained that way until dinner time.

Dinner: lemon pepper pork loin; big salad with cilantro, romaine and spinach; baked "potato" casserole (it's really cauliflower)

I cook the cauliflower in the microwave then blend in the food processor with a little sour cream, butter, a splash of vinegar (it really adds to the flavor), salt and pepper.  Put in 8x8 casserole dish. Top with cheddar, bacon and chives.  Heat in 350* oven until melty and hot.  We never have leftovers.  One of my new favorites.
Reminds me of potato skins.
The pork loin was a little too small for a family of 4 so I didn't get as much protein as I should. Oops.
Did get a big salad though!

Exercise: walked with Chuck and Rachel around the neighborhood for 2.6 miles.  I may have shuffled my feet a little to try to get in some running.  And Rachel may have said, "I thought the doctor said no running." So I may have felt guilty and stopped.

Charlie didn't go with us.  He's not feeling well and running a low grade fever. :(

Scared Straight

I'm going to admit a couple of things to you that I'm not proud of but it's the truth and I've always been up front here on my little blog.

When I was diagnosed with IR (insulin resistance) and other issues including thyroid and PCOS, etc., I was a bit in shock. I felt like I was standing still but the earth was spinning out of control. I froze.  I even forgot some of the numbers the doctor had told me on my test results.  Fortunately he did have me write some things down or they would have been lost in space.

The next day I went out of town and tried to follow the advice in the book that Dr. Wheeler recommended called the Insulin Resistance Diet.  I read it out loud to Chuck (he wanted to know about it too) and we learned more about how and why this happens and what I can do about it.  And I tried to put that knowledge into practice that weekend.

I lost about 4 pounds water weight that week. And then things leveled off and I started taking the Glucophage which totally messed my world up. Couldn't eat, couldn't get out of bed, couldn't concentrate.  Then my chest started hurting.  I felt broken.  I was a defective trophy wife.

So I rebelled.  I stopped taking the Glucophage (also known as metformin) and I decided that I knew better how to handle this.  I would wear my bodybugg and count my calories in and calories out.  I would work out twice a day. I would train for a half marathon.  I would eat 1200 calories per day.  I would create a 1000 calorie deficit (minimum) every day and lose at least 2 pounds per week and sometimes 3. (Again, I hate being told what to do so I try to do it another way. I'm going to work on that. I even have a bumper sticker that says "Does Not Play Well With Others.")

So I monitored my calories and ate whatever the hell I wanted as long as it was within my 1200 calories.  I kept track of all the calories burned and did the math each day to figure out how much I should lose.  On weigh in day I expected big things.  It's simple math right? If you burn more calories than you take in then you lose weight. If you take in more calories than you burn you gain weight.

Weigh in day. I gain 2 pounds. Frustration doesn't quite cover my feelings.  I'm defective and I can't lose weight.  Defeated.  Chuck felt so bad for me. I tried to hide my frustration most of the time but I felt doomed. I've been at this weight loss thing for a while now. Too long.  I should have reached my goal.  And I've tried so many different things with limited success on all.  How can a person gain weight when taking in 1000 calories less than being burned each day? It doesn't make sense. I felt like people were thinking that I was lying about how much I did and how much I ate because it doesn't add up.  I promise you, I wasn't lying.  I was giving it my all.  It consumed me.

In February I went to San Antonio with Anne (just the sweetest person you could hope to meet).  I decided I was going to stick like glue to my IR diet. After all, calorie counting was not working for me one bit. Anne is a low carb eater.  It turns out that  we ate pretty similar except with breakfast I'd have 1 piece of toast and she wouldn't.  At the Mexican restaurant I had a couple of chips and one tortilla.  She didn't.  Other than that we ate almost identical.  I lost 5 pounds at my next weigh in.  How did that happen?!  I'd been stuck at the same weight for over a month and then I lose? Awesome.

I started reading. First Why We Get Fat by Gary Taubes.  Completely blew my mind.  I love books that challenge my long held beliefs.  It made me rethink many things and want to delve deeper into the whole subject.  I started making a few changes in my diet (and when I use the word diet it's not a temporary eating plan; I mean lifestyle of eating.).  I started to see the scale move in the right direction although slowly.

I was sent a free start up kit from Atkins.com. I read that info.  I read The New Atkins For A New You book. I read Protein Power.  I changed my eating even more as it started to make sense why I would gain weight when I should have been losing.  And I lost more weight. Finally! Something is working for me!!!!  My husband is wearing clothes that didn't fit a few months ago.  Rachel's clothes don't fit at all now and she is so happy because she has a bit of a self image problem. It kills me to see that too because I think she is such a beautiful person both inside and out.  Charlie is just fine. :)

Besides Why We Get Fat the other book that really struck me was Living the Low Carb Life. It discusses the history, why we have problems (not everyone is sensitive to carbs and can eat them and still not gain weight), the different low carb plans and the pros and cons of each one, different recommended books, how to make it work for you, etc.

Right now I'm reading the part about insulin resistance. It scared me pretty bad. IR is not something you want. Weight loss is difficult at best. The risk for heart disease is increased 6 times. Hypertension (I have it). Risk of diabetes. I read that 80% of diabetics were/are insulin resistant. I learned that my body treats carbs as a toxic substance and works very hard to get those taken care of immediately and out of the bloodstream regardless of what that may do to the rest of the body.

Think of your house on fire.  The main goal at the time of the fire is to put the fire out not matter what.  During the process of trying to put the fire out you may have to ruin items in your home that you cherish. They'll get wet.  But it doesn't matter at the time.  The fire is the most important problem at hand.  My body treats blood sugar the same way and insulin is the water to douse that fire at the detriment of other body parts and systems. Not good.

Yes, I was stubborn to take my doctor's advice of lowering carbs. I wanted my cake and eat it too. I just didn't want to be told what to do.  And I hate being told that I have to take medicines. I feel as if I'm on life support: if I don't take these I'll die.  That sort of thing.  Time to put on my big girl panties and just deal with it. Ya know?

After a little time of experimenting (not much, mind you) I've seen that if I have a few carbs too many (and I don't know how much is too many at this point) I gain weight.  It doesn't take much. One soft pretzel did it to me last time. One pretzel.

So when I go out I know that if I order certain foods it will show as a weight gain.  My doctor said I had one of the worst cases of insulin resistance he had seen. Great. Not exactly the prize I was seeking.  I have to make a conscious decision before I eat carby foods and know that I will gain weight and decide if it's worth it or not.  I also have to decide each time if it's worth my health because this does some bad stuff to my body.  My birthday, I'll have a bite of cake. I can make that choice.  Or maybe I'll make a low carb cake!  I'm running a relay at Blue Bell creamery. All you can eat ice cream afterwards. I'll have a small bit and deal with it.

I don't want diabetes, weight issues, heart disease, high blood pressure, etc.  That's why I have to eat low carb.  I don't think it's an option for me.  It's something that my body requires.  Diabetes runs rampant in my family.  I'm going to do my best to avoid it.  Weight issues are also a problem. I'm trying my best to fight my own little battle here.

The prescription insurance company called me last night.  The lady on the phone was a diabetic medicine specialist or something like that.  She wanted to discuss my meds with me.  Answer any questions I may have.  See how I'm doing. WOW! I've never had them call me before.

I told her I was not diabetic and told her about my IR and the Glucophage and my problems with it.  I told her that I was taking mere crumbs right now.  We discussed how the meds worked.  I also gave her my fasting glucose level (84) and she said that was very good and it sounded like I was handling the IR with the meds and diet. She also suggested I get an A-something test done.  I should have written it down.  She gave me an 800 number to call to discuss any questions about my meds or diabetes, which I thought was great.  I sometimes do have questions and don't know who to ask right then except Dr. Google.

Weight: 177.8   YAY!  In the 170s finally.  Very happy to see that.

Eats:
Breakfast: scrambled eggs and little tiny smoked pork chops that were a lot like canadian bacon.
Lunch: tuna on salad greens with some Caesar dressing
Dinner: I had a craving for a burger.  Mooyah lettuce wrapped bacon cheeseburger. Very filling. Very tasty.
Snack: a camera shy low carb ice cream bar (5 carbs)

One thing I can say is that I'm not hungry eating this way.  I don't have to worry about hunger at all! If I'm hungry, I eat.  And it doesn't take much to feel satisfied.

Chuck mentioned that he feels more alert and has energy as soon as he eats each time.

You have to find what works for you.  Every body is different.  There is no cookie cutter way of life for everyone.  I'm just so happy that I may have found a way to deal with IR and lose weight.  I'm still reading.  I still have a lot of questions (are there any long term side effects of this?  What about saturated fats? etc).  But at least what I'm doing so far is having positive results.  I'll find out more when I have my blood work done in May and I can compare it to my previous tests.

And I'm going to work on my stubborness. I'll start taking the advice of my doctors and not see it as a challenge to do the opposite. :)

I sincerely hope you've found what works for you.  And I hope you don't feel like I'm shoving low carb down your throat.  I'm not out trying to make converts or any such nonsense.  I'm just sharing what I'm doing to help myself.  If you can get by with low fat, high carb then great for you!  It simply had the opposite effect on me.

The Doctor Visits

I always thought that people who were fine right after a car accident but complaining of neck injuries the next day were nothing but ambulance chasers.  Especially for a mild fender bender.  Then it happened to me.

Last Wednesday I was in a little car accident and was fine except a little shaken up.  Thursday morning I woke up with a sore neck and back.  My neck was so bad that it hurt to even touch it gently.  I thought it would get better as the day progressed.  Wrong.

Friday I was too busy to get to the doctor but I was finally able to go yesterday (Monday).  First I went to the chiropractor and she said that most people are like that: fine the day of the accident but the next morning feel all the aches and pains.  I was out of alignment so she worked on me with some machine that made my muscles jump a little.  Then I was put on a massage table that was wonderful.    She then put me on the adjustment table and felt my spine and neck and said it was very tight and I had limited range of motion in my neck.  She touched one spot on my hips and I almost jumped off that table!  I didn't even know I was hurting there!  She said she could tell when I walked in that I was out of alignment.

Got my adjustment but my neck didn't move much so I have to go in three times a week so she can work on that.

Next appointment: my family doctor.  He's from India and I just love to hear him talk. "Whut can I do fer you?" 

I tell him my story and he said "Eet is veddy common."  My reflexes were fine so he said to continue my therapy at the chiropractor.  In the meantime I get Vicodin and Soma. 

Vicodin is a wonder drug.  It cures everything or at least makes you feel like you're cured.  I took my pill and was happy.  I love everybody and everybody loves me.  There are no wars.  No crazy drivers and even the ones that try to hit me I just want to give them a hug.  Unicorns are frolicking in my front yard amongst sparkling rainbows while I skip among the tulips.  I tell you, this stuff should be available over the counter.  The world would be a happier place.

Soma.  Holy crap!  It is just a coma inducer.  Nice muscle relaxer. :) One minute I was reading a book last night and the next I'm drooling.  It's better than Ambien.  I took Ambien before and instead of putting me to sleep I became a wild and crazy party animal but remember nothing the next day.  That's dangerous.

OK, enough drug talk.  I'm ok.  But if I leave a particularly loving comment (or strange comment) on your blog it's just because I'm on my happy pills.  I'm fine. Really.

Exercise: Doctor said no running for at least a week so I don't jar those neck muscles.

What she said: "I advise you not to run for at least a week so you aren't aggravating the neck. Just speed walk."  (advice)

What I heard: "I dare you to try to run. You can't do it, can you?" (dare)

I hate being told what to do.  It's a character flaw I'm sure.  And listening to stories that my mom tells of my childhood, it's something I was born with. Stubborn. Strong willed.  Whatever.  I don't like being called no.

So my natural inclination is to go for a run come hell or high water.  And the vicodin makes me feel like I can do anything. Maybe if I shuffled my feet when I ran? :)

While waiting for my meds to be filled at the pharmacy I stopped by Half Price Books. WOW!  They have some really good prices on cookbooks. I got some "light"  reading.

Last Wednesday I had to visit the powder room in the middle of the night.  I got out of bed but didn't have my land legs and stumbled and tripped and hit my shin.  It still looks nasty and hurts.

Eats:
Breakfast-Muffin in a Minute
Love my Texas mugs

A little bit more dry and grainy than a real muffin but still tasty.
So easy to make and only 3.2 carbs. Just stir together 1/4 cup flax seed meal, 1 tsp cinnamon, 1/2 tsp baking powder, and 1 packet Splenda or Stevia in a coffee mug. Stir in 1 egg and 1 tsp butter.  Microwave 1 minute. Eat!  The recipe can be found here with all the nutrition stats.

Lunch- leftover veal scallopine and 1/2 cup steamed broccoli with soy sauce

Snack-on the run. protein bar

Dinner- Baked Cod with Lemon & Parsley, baked asparagus, and salad. 
Like, Oh my cod!

It was some of the best fish I've made. Charlie ate more than Chuck!  I think he would have had more fish had I any left.  I will definitely make this again. Soon. 
Baked Cod with Parsley & Lemon
from Protein Power
Serves 2 but you can double it easily

3/4 to 1 pound cod, grouper, flounder, etc.
1 egg beaten with 1 Tbs milk (I used half and half)
3 Tbs wheat germ
2 Tbs grated Parmesan cheese
1 Tbs olive oil
1 Tbs butter
2 Tbs minced parsley
1 tsp grated lemon zest

Soak the fish in the egg wash for 30 minutes.  Mix the wheat germ with the Parmesan and dip the fish into it on both side to form a light coating--no more than needed.  Preheat the oven to 375*. Heat the oil and butter together in a nonstick skillet (I used my cast iron skillet) with an ovenproof handle and lightly brown the fillet on both sides over medium heat.  Remove the skillet to the oven and bake for 15 minutes or until the fish is firm.  Garnish with parsley and lemon zest.

Per serving: 4.5 g carbohydrates, 47 grams protein

Absolutely delicious.

Baked asparagus:
Snap off any woody end. Sprinkle with olive oil, salt and pepper. Bake for about 8 minutes in 500* oven, stirring occasionally.  I sprinkled some Parmesan on top after I removed them from the oven. Yum!

Great dinner.
Snack- Chuck made me a Coke float with some low carb vanilla ice cream and some Diet Coke. Very good.

Total carbs: approx 20.7 grams

I really need to drink my water today. Didn't do that like I should yesterday.


That's it for today. I plan to get some form of exercise today (shuffle running maybe?) and work on a menu for the rest of the week. Have a happy day.

Photo Update

Photo update time.  I like to take a photo at 5 pound increments but I'm a little late on this one.  So instead of 180 pounds this is 178 pounds.

Last night we went to a hockey game.  Great game! The scores were tight the whole time but Houston pulled a win.

We were starving by the time we got home. I made steaks, cauliflower & broccoli mix and a salad.  Sounds good but I also had 3 light beers (low carb but still not a great choice). Sure were good though.  Gotta stop making that a Sunday habit.

Charlie got the new Nintendo 3D.  He's so excited.  Thanks, Grandma and Pappy!

Weight Monday morning: 178.0    Didn't lose but I didn't gain.  Chuck's weight did the exact same thing. Tomorrow I hope to see the 177s.

Another side effect of me cooking lower carb: Rachel has dropped a size and needs new clothes now. A belt won't even hold her jeans up.  She's pretty happy about that.  Me too.  I just want her to be healthy and not get caught up with weight numbers.  In other words, don't be anything like me. :D

The Weekly Scale Results

The scale and I were having relationship problems for a while.  We weren't on speaking terms.  I gave it the cold shoulder and it would only say ugly things to me.

My past relationship ended with me shooting my old scale.  I found out it had been lying to me by saying I weighed less than I really did.  Even then it would just get stuck in a rut and wouldn't say anything new to me.  So it had to go.

The new scale and I have had some bumpy times but I think that we're coming to an understanging in our relationship.  As long as it tells me what I want to hear we'll get along just fine.  And its life isn't in jeopardy.

This week: Down 3 pounds.  178.0     BMI is 27.9

Not too shabby.  It is so good to see the results both on the scale and in my clothes.  I think I may have found what works for my body.  That being said, I'm still jealous of you guys posting your bagel eats. :)

*Almost got hit by another car on Friday.  This time it was a Suburban.  I had to swerve into another lane to avoid this car.  Different location and different situation this time.  Chuck was following in his truck and saw the whole thing.  I drove with my lights on afterwards so maybe people would see me.  Lots of crazies on the road.

*Replaced my stove!  YAY! It's so nice.  The broiler is in the oven instead of in a drawer at the bottom.  It has 5 burners!  I cooked veal scallopine and sauteed chard on it last night. Perfection.


*Chuck shot in a tournament Saturday and came in second.  I'm so proud of my guy.  He was really hoping to come in first but his shooting was great.  He only missed coming in first by less than a second.  VERY close.

* Sunday we are going to another hockey game.  I think Charlie really enjoyed it last time.

Hope you're having a great weekend.  I don't know about you but this one has flown by.  Monday always seems to drag. Perhaps it's the theory of relativity: time's perceived speed is determined by how much fun you're having. :)

Quickie Post

  • scale shows 178.9 this morning.

  • almost got in another wreck yesterday at the exact same location in the exact same way.  But I looked over my shoulder before I made the turn and, sure enough, a Honda minivan zoomed straight in the turn only lane.  What have I done to offend thee, O Honda?! (I like Hondas but they hate me.)

  • went for a hike at Sheldon Lake State Park with the kids. Was scared by three alligators when they jumped in the water. Saw a snake, bunny, birds, frogs, fish, and flowers.

  •  I had to visit the restroom and while...visiting...a wasp climbed from under the toilet bowl right between my legs.  I screamed.

  • Off plan day. I planned on making veal and had it defrosted but the kids used the oven to make a pizza and then the oven wouldn't shut off.  It kept getting hotter!  Finally had to turn the breaker off or it'll start heating up again.  So while out looking for a new range we stopped at Mooyah and I got a lettuce wrapped bacon cheeseburger that was delicious. I didn't get all of my planned veggies in. 

  • I had to get up in the middle of the night on Wednesday and tripped and bumped my shin so hard that it's all scratched up and has a big knot on it that hurts. Ouch!  Also, my neck is sore from the little accident on Wednesday so I have to go visit the chiropractor.

Car Accident (I'm ok) & Another Milestone!

Yesterday morning I headed to the grocery store because Rachel needed some gloves for her dissection lab that day (I always preferred to do my dissections without gloves but whatever) and to check out the "reduced for quick sale" specials (though I think they call them "manager's specials").

I was on the service road (we call it the feeder road in these parts) in the right lane to turn left, and there was a car in the left lane which is a "turn only" lane.
I've got mad drawing skillz. I'm the blue car.
When the light turns green I move forward to turn left but the grey car decides to go straight and rearends me.  I was so upset.  Not that I was hurt or anything but it's a real pain in the neck to get the car repaired and takes time out of my day plus there's the hassle, etc.


The guy gets out and just wants to exchanged info and leave but I insist we get a police report.  He wasn't very happy about that. Turns out he doesn't have his insurance or license on him.  The police show up and so does the kid's dad who is not a happy camper.  The dad apologizes to me and assures me that they have insurance.  The police report is taken and I'm on my way after two hours.

I was debating whether to mention this or not but it's all in good fun so I don't think anyone would be offended. Right?  So, we have a running joke around here that if someone cuts you off in traffic or is driving crazy or involved in a wreck it's usually a Honda.  I swear, they're out to get me.  After the accident, I call Chuck and say, "Guess what kind of car hit me. A Honda!!" LOL  Trust me, it's funny and ironic at the same time.  (I apologize if you're a Honda owner.  No offense meant.  Just that Hondas around here have always had something against me and one of them finally got me.)

So my miniature van, Vincent Van Go, has a cut on its fanny.
It's not too bad but you should see the poor Honda! Lots of damage.

I was a little shaken up still but I had to go to the store and while there I got into some weird buying mode.  I was not completely back to normal and started buying stuff. "Oh, I think I should buy some broccoli" and then fill up an entire bag. "Ham.  I should buy a ham."   "Rock Star.  I think I need Rock Star. I'll just buy 20 of them." My hands were still shaking a little when I tried to pay for all of my loot.

I can say that now I have a very full freezer.  I don't think I can fit anything else in there.  I also got 3 gallons of milk for no reason other than they were cheap.  So they're in the freezer too.  Wow, it's weird to go shopping when you're hopped up on fear.

The bump in my morning put me off on my schedule.  I got home as quickly as I could and made some eggs for me and the kiddos and then it was time to leave. I grabbed a couple of protein bars and was out the door.

So lunch was on the road: a protein bar.  These things are a lifesaver when you need something quick and portable.

I wasn't finished with my "retail therapy" (a term that I think Shelley coined).  I stopped by the book store and got me a new cookbook and a carb counter and also a couple of things for Charlie (my son).  I was finally feeling back to normal but a little tired and a slight headache. 

Got home, had a celery stick with french onion dip, and took the kids for a bike ride. VERY therapeutic. We stopped at the park to play on the playground. I climbed some bars to the limit that my fear of heights allows. Charlie passed me up to show me that "it's easy."

Then time for dinner: Chili-Stuffed Peppers from Protein Power that I borrowed from the library.
I really need to start using a different camera than my cell phone for pictures.

The peppers were huge and tasty.  Chuck and Charlie were the only ones that could finish theirs.

Chili-Stuffed Peppers
Serves 2 but you can double the recipe

2 large red or green bell peppers
3/4 pound ground meat
2 garlic cloves, minced
1 small red onion, minced (I used onion powder)
1 canned chipotle chili in adobo or 1 canned jalapeno plus a dash of liquid smoke
salt and pepper to taste
1 tsp. ground cumin
1 tsp dried oregano
1/2 cup grated cheddar or Monterey Jack cheese

Grill the peppers over an open flame or directly under the broiler, turning often, until the skin is totally charred.  Watch them closely so the peppers don't collapse.  As soon as they are blackened, put them into a plastic bad and let them sit for a few minutes until they're just cool enough to handle. Don't let them sit too long, or the steam in the bag will soften the peppers too much. (I did that!)  Rub off all the skin.  Carefully cut around the stem and pull it out.  Carefully scoop out the seeds with a teaspoon.  If you mistakenly tear a pepper, don't despair; they'll taste good anyway.  Preheat the oven to 350*.

Mix the meat well with the remaining ingredients except the cheese.  Stuff the peppers and stand them up or sit them down on a pie plate or shallow oven pan.  Bake them for about 20 minutes (I did mine for 30 mins) and then remove them from the oven to mound the cheese on top.  Return the peppers to the oven to melt the cheese and ensure that the meat is cooked.

I served them with some of my broccoli stash from my crazy shopping trip at the store earlier.

Good dinner and I had the table set with some beautiful spring tulips.

For dessert, I had a low carb ice cream bar while watching Modern Family. Not a lot of eats for Wednesday but my schedule was thrown off balance. Total carbs for day: 21.5 grams

In case you're wondering "why all the low carb stuff all of a sudden?" it's because I'm trying to find the best way to eat for my insulin resistance.  The doctor had told me to cut back on carbs and gave me a diet but my body was still having fun with all of the carbs it was allowed.  So I'm doing a self experiment to find what works for me.  I'm a little jealous of you people who can eat oatmeal, pizza, and all the fruit you want and still lose weight.  It just doesn't work that way for my body. Believe me, I've tried.

Now for my new milestone. I've been monitoring my weight to record fluctuations and see what foods cause a gain.  Experimenting.

This morning I got on the scale and it said one.seven.nine.  Holy moly! Did you see that? 179.  As in, there is a seven behind that 1.  Are you kidding me?!!!  Excited doesn't begin to describe it.  I am in shock but in a good way.  I haven't seen the 170s in so long.  I almost thought I'd never get there but here I am!  Yesterday's scale showed 180.0 and today is 179.0. On the nose.  Wow.

The Tuesday Munchies and Headaches

Tuesday I had a massive headache from hell and just couldn't figure out why it wouldn't go away.  Today I found out.  Hormones. Ugh.  Not very fun at all.

Started the day off with a beautiful omelet filled with spinach and cheese.  It was very pretty and perfect!  I took a picture but I guess my camera thought it looked so good that it ate it because I can't find it!  Trust me, it was impressive. :)

Snack- 1 cup broth, celery stick with french onion dip

Lunch- smoked brisket that I got for $8 for the entire brisket though it was originally $21 (!) and a salad with Caesar dressing
 My head was killing me so I played the lazy housewife yesterday.  Not much going on.  I did change the cat litter box.  Hey, it's something.

By the way, I had no idea cats were so annoying when they came in heat.  She will be making an appointment to visit the vet soon! OMG, we were all going crazy with her for a few days.  Cats are so weird. :)

Dinner-sweet hubby suggested we eat out since I was a spaced out zombie with a headache.  Good idea.  I had a steak salad from Freebirds. Yum!  I told them extra "death sauce" and they certainly obliged.  My nose was running and I started to sweat a little.  Makes you know you're alive!

In all I had 21.3g of carbs that day.  Still got in some veggies.

NSV (non scale victory): I bought a pair of shorts on Friday.  I had tried them on a week earlier but wanted to wait to buy them in case I found a better deal (I'm a sucker for good deals) but, alas, there were none.

These things fit when I first tried them on. Last night I was able to pull them off without unbuttoning or unzipping them!  Crazy, I tell you.  But in a good way. :)  So could size 12s be on the horizon?  I shook the magic 8 ball and it said "outlook good." ha!

Milestone Reached!

Top o' the morning to ya!  Still feeling the St Patty's Day vibes, I guess. :)

Before I get to my happy milestone, a little recap of Saturday and Sunday.  I'll try to make it short but it's not really my nature.

Saturday:
 Eats for the day....
Breakfast-scrambled eggs with salsa, 1 oz smoked turkey sausage, coffee, 1/2 light toast with butter

"snack"- 1 cup broth

Lunch-leftover Italian Pork Chop, 1 cup green beans

snack-low carb ice cream bar (5 g carbs)

dinner-steak salad with cheese, sour cream and queso at Freebirds. Sooo good but I couldn't finish it all but I put a big dent in it.
The guy making the salad: "you start off healthy with a salad then you go and put queso and sour cream on it?"  LOL


I scored a 4-pack of tickets plus parking for $45 to the Houston Aeros vs the San Antonio Rampage game. Awesome! It was the kids' first hockey game and I think they had a great time too.  I could really get in to hockey.  Lots of action and sometimes fights even break out.   There's just so much energy and I get all caught up in it.

We ran to the car (literally ran) about 2 minutes before the game was over to avoid the massive traffic jams.  We got out of there just in time.

Had to stop by the grocery store for some breakfast items and a couple of snacky items.

Got home and had a...

Sunday: weigh in day-181 but so close to 180
I love the weekends.  Chuck is home and he cooks breakfast.

Eats:
Breakfast-2 fried eggs, SF Rock Star, bacon, 3/4 piece of light toast with butter, coffee
Those fried egg breakfast keep me full for hours.

We took the kids to the front pond (the neighborhood calls it a "lake" but it's really just a pond. city folk.LOL) to play with their RC boats.  Those things are fast!  Lots of fun and lots of wind.  We were supposed to go canoeing but the wind was too strong for that to be an enjoyable experience.

Then off to Brazos Bend State Park for a nice hike in this gorgeous spring weather. We have to enjoy every moment because spring doesn't last long here.

We walked for a couple of hours. I'm not sure of the distance but it was a nice hike.

Lunch-cheese stick (wasn't that hungry)

Dinner-steak with garlic seasoned compound butter, cauliflower casserole to act as baked potato casserole, Caesar salad, 3 Miller Light beers (a little over 3 carbs each)
What a dinner after such a great day.  I probably shouldn't have had 3 Miller Lights but I have to tell ya, sitting outside after a nice hike, the grill going, a cool breeze blowing, watching the sun set, listening to birds and crickets, and sipping on a cold beer....it's hard to beat. Total relaxation.

One drawback to having a drink is that it can give you the munchies.
Snack-1 piece of 80% cocoa chocolate, 1 small sugar free coconut candy (still have some sugar cravings. beer does not help. no regrets though)

If you're interested, the cauliflower casserole was just something I tossed together that turned out great. I cooked some frozen cauliflower, blended it in the food processor until smooth with butter, some french onion dip (you could use sour cream), garlic powder, salt and pepper.  Put in casserole dish and sprinkled with cheese, chives (fresh from the garden), and bacon. Put in 350* oven for about 10-15 minutes and serve. It was really good.

The milestone: I've officially lost 70 pounds now! Down to 180. YAY!!!  Two pounds down this week and I certainly haven't been starving.

It's only taken forever but at least I'm there.  Onward and downward.
